Larry Jayasekara, Head Chef at Pétrus
Larry is originally from Sri Lanka and has lived in the UK for the last 16 years. As well as working with Gordon Ramsay, Larry has also worked with the likes of Raymond Blanc and Marcus Wareing. For the last eighteen months, he has worked as Head Chef of Pétrus. ‘I have always loved food and I started cooking at the age of nine with my mother back in Sri Lanka,’ explains Larry. ‘We would cook fresh produce from the market, whatever was available. She would make up recipes that brought out the best of the ingredients. This is fundamental and really highlights the natural flavours of the produce.’
According to Larry, the philosophy of Pétrus is ‘premium seasonal produce.’
If you like the idea of having your wedding at Michelin star restaurant Pétrus, then the first stage is a meeting at the restaurant, where you’ll discuss your specific tastes and desires for a completely unique menu. ‘We create a completely bespoke menu for the couple,’ says Larry. ‘I then often add a surprise element on the day, which is picked up from the initial consultation. I want a couple’s wedding to be as special and memorable as possible. This means going above and beyond to surprise and delight them.’
Larry’s idea of a perfect wedding menu would include a stunning selection of canapés with Champagne, followed by a freshly caught crab or scallop starter.
For the main course, he moves onto a beautifully cooked fillet of beef.
And to follow, an exquisite chocolate dessert such as the Palette D’Or.
